Job Description

BASIC FUNCTION

Responsible for the preparation and production in the Canteen Kitchen. Coach and impart culinary skills and knowledge to the Cooks, Demi chefs. Assist the Executive Sous Chef, Sous Chef in the efficient operations of the Kitchen in relation to food preparation in accordance to specified standards established by Executive Chef.

DUTIES & RESPONSIBILITIES

- Responsible for the overall operations of the Muslim kitchen.

- Supervise, coordinate and participate in kitchen activities and adhere to proper cleaning, hygiene, recipe and standard cooking method set by the Executive Chef.

- Check daily work routine or other forecasts to determine the quality and quantity of food required.

- Prepare requisition of food items based on daily consumption, observe and carry out food testing to ensure standards are met.

- Check for correct portioning and good presentation of food before allowing for pick-up.

- Supervise the cleaning of refrigerators, cold rooms and kitchen premises in accordance with schedules or as when necessary.

- Check and ensure the buffet spread is well replenished and sufficient quantity of food is available during stipulated meal serving hours.

- Check and ensure all kitchen equipment are in good working condition, and report any defects to the Executive chef for rectification.

- Prepare food items in accordance to recipes and instructions provided by the Sous chef on duty.

- Follow the guidelines on basic food hygiene and make recommendations for improvement as and when necessary.

- Provide support to other sections during peak hours or as and when required.

- Perform any other duties as assigned by the Management.
