Shangri-La Rasa Sentosa, Singapore – Hygiene & Sanitation Trainee

The Hygiene Intern supports the hotel’s food safety and sanitation standards by assisting in daily hygiene checks, documentation, and basic compliance tasks. The role helps ensure that food handling areas, equipment, and work practices meet required hygiene and safety standards

Responsibilities

Food Safety & Personal Hygiene

• Support compliance with hotel food safety and hygiene guidelines
• Observe and report food handling practices in kitchens and F&B areas
• Ensure basic personal hygiene standards are followed (e.g. handwashing, proper attire, no jewelry, clean uniforms)
• Assist in basic hygiene awareness reminders to colleagues when required

Premises & Kitchen Hygiene

• Support daily checks to ensure kitchen and back-of-house areas are clean and safe
• Report issues such as poor sanitation, pest concerns, or equipment faults
• Ensure waste bins are properly covered and disposed of regularly
• Assist in checking that cleaning schedules are followed

Food Storage & Handling

• Assist in checking food storage conditions (chillers, dry storage, temperature checks)
• Support basic stock rotation practices (FIFO)
• Observe proper segregation of raw and cooked food
• Assist in monitoring expiry dates and storage cleanliness

Cleaning & Sanitation Support

• Assist in monitoring cleaning practices and chemical usage
• Ensure cleaning tools and chemicals are properly stored and labelled
• Support checks on dishwashing and sanitation procedures
• Report any hygiene gaps or non-compliance issues

Documentation & Reporting

• Assist in maintaining hygiene checklists and simple records
• Support monthly hygiene and food safety reports
• Help compile observations from daily/weekly checks
• Maintain confidentiality of internal findings

Training & Awareness

• Support hygiene training sessions for colleagues when required
• Participate in food safety and hygiene training programmes
• Help reinforce basic hygiene best practices in daily operations

Environmental & Safety Awareness

• Support recycling and waste reduction efforts
• Practice energy-saving and environmentally responsible habits
• Follow all safety and emergency procedures
• Participate in safety drills and mandatory training

Ad-hoc Duties

• Assist the Hygiene & Sanitation team with any additional tasks or projects assigned by supervisors 

Job Requirements

Essential

• Physically fit and able to work in kitchen/back-of-house environments
• Basic proficiency in English (spoken and written)
• Detail-oriented and observant
• Willingness to learn and follow instructions
• Positive attitude and good teamwork skills

Preferred

• Basic understanding or interest in food safety or hospitality operations
• Computer literacy (basic Excel/Word for reporting)
• Flexibility to work in different operational areas
