Job Description

Central Kitchen

  • Daily post-operational hygiene check
  • Perform hand swab/ Environmental swab/ Equipment swab
  • Air Test
  • Ice & water monitoring microb test
  • Monthly food sampling and monitoring microb test
  • Assist to update microbiological test results
  • PH testing for Lye water
  • Chiller & freezer temperature verification & validation
  • Calibration of weighing scales
  • Thermometer validation
  • Assist to conduct central kitchen audits and prepare audit report
  • Track audit
  • Weekly Poster in CK (Food safety & food hygiene related issues)

Microb Lab 

  • Microbiological testing: Sample preparation, perform testing, interpretation of results
  • Prepare buffer solutions
  • Prepare agar plates
  • Proper waste management for agar and laboratory materials
  • Cleaning & housekeeping of the laboratory
  • Weekly inventory check on consumables

Outlet Audit 

  • Perform routine outlet audit (food sampling, hand swab, table wares swab, air test, salinity check, chiller & freezer verification)
  • Follow up audit (verification on outlet follow action)
  • Assist to generate audit report for each outlet
  • Assist to compile and finalise audit scores

Food Safety and Hygiene Course 

  • Assist to prepare training materials
  • Brain storm interactive class activities for engagement & better understanding
  • Check SFA website regularly for food safety & hygiene related update,
  • Case study of food safety & hygiene related incident (root cause / investigation findings/ preventive measures)

  • Hands-on, independent team player
  • Positive working attitude
  • Fluent proficiency in mandarin is preferred as required to liaise with mandarin speaking colleagues.
