Job Description

6-Month Learning Objective for Intern: F&B Operations Executive Track

The objective of this 6-month internship is to equip the intern with practical outlet operations exposure, basic supervisory capability, and the confidence to support White Restaurant’s daily F&B operations as an entry-level F&B Operations Executive. By the end of the internship, the intern should be able to assist with outlet audits, service standards, cost monitoring, staff coordination, customer recovery, and operational reporting under the guidance of the Operations Manager.

Month 1: Orientation and Foundation

  • Understand White Restaurant’s brand standards, outlet structure, reporting lines, and expectations of an F&B Operations Executive.
  • Learn key SOPs covering service flow, food quality checks, hygiene standards, opening and closing procedures, and customer handling.
  • Shadow outlet managers and senior team members to observe daily operations, peak-period execution, and communication routines.
  • Deliverable: Complete orientation checklist and submit a short reflection on key operational observations.

Month 2: Outlet Operations and Service Execution

  • Support frontline service operations during selected shifts to understand guest flow, table turnover, queue management, and service recovery.
  • Observe how outlet teams manage manpower deployment, shift handovers, and peak-hour priorities.
  • Assist in checking service readiness, cleanliness, staff grooming, and basic outlet organization before operations begin.
  • Deliverable: Prepare a weekly outlet observation report highlighting service strengths, gaps, and suggested improvements.

Month 3: SOP Compliance, Food Safety, and Audit Readiness

  • Learn how operational audits are conducted, including cleanliness checks, food safety practices, equipment condition, storage standards, and documentation accuracy.
  • Assist the Operations Manager or Restaurant Manager in conducting basic checklist-based outlet inspections.
  • Understand follow-up action planning for non-compliance issues and how corrective actions are tracked.
  • Deliverable: Complete at least two supervised audit checklists and summarize key improvement actions.

Month 4: Cost Awareness and Performance Monitoring

  • Develop basic understanding of sales performance, labour cost, food cost, wastage control, productivity, and operational overheads.
  • Assist in compiling sales and productivity information for review by the Operations Manager.
  • Observe how outlet managers make decisions to balance service quality, manpower, and cost control.
  • Deliverable: Prepare a simple performance summary using selected outlet data and identify two practical cost-control opportunities.

Month 5: Team Support, Communication, and Customer Engagement

  • Support communication between outlet teams and the Operations Manager by helping to follow up on action items, updates, and operational reminders.
  • Observe basic coaching conversations, service briefings, and feedback sessions with outlet staff.
  • Learn proper customer recovery steps, including acknowledging concerns, escalating issues, and closing feedback loops professionally.
  • Deliverable: Draft a short team communication update and document one customer service recovery learning case.

Month 6: Consolidation and Readiness Assessment

  • Apply learning by supporting a selected outlet improvement initiative, such as audit improvement, service consistency, reporting accuracy, or productivity enhancement.
  • Demonstrate ability to prepare clear updates on outlet performance, operational issues, corrective actions, and follow-up status.
  • Receive final feedback from the Operations Manager on operational knowledge, communication, initiative, reliability, and readiness for an F&B Operations Executive role.
  • Deliverable: Present a final internship summary covering key learning, outlet improvement contribution, and development areas for the next 6 months.

Success Measures

  • Shows consistent understanding and application of key SOPs and audit standards.
  • Completes assigned reports, checklists, and follow-up tasks accurately and on time.
