Job Description

Job Summary

The Assistant Manager shall manage, plan, organize, control, and direct a team of staff operating in the service sections to ensure the smooth running of daily operations in line with the Company’s business objectives and ensure guest satisfaction.

Duties and Responsibilities

Operations

  • You shall be responsible for inventory management, including but not limited to sakes, glassware, and linen through proper planning and utilization of available resources
  • Work with the OM to improve restaurant standards and service benchmarks to increase revenue and reduce costs, which include food and beverage, manpower, supply, and utility costs
  • Jointly responsible for achieving sales targets, quality expectations, and service performance
  • Ensuring cash management protocols are adhered to at all times and balances are correct
  • Documentation of daily sales
  • Create and update guest history and guest spending record
  • Responsible for the costing and update of all costing sheets for Sakes
  • Work closely with the kitchen to design an effective menu while ensuring excellent product quality at a fair price
  • Work with Business Development, OM, Kitchen, and team to plan and execute events and help to co-ordinate all items
  • Attend daily role calls prior to each service
  • Attend bi-monthly food meeting
  • Attend weekly operations meeting to ensure effective coordination and cooperation between the department
  • Rendering assistance to other outlets that may be short-handed if and when their own operations allow
  • Walk through the back and public areas including the entrance and washrooms before the daily operation to ensure a clean, neat, tidy, and odour free environment 
  • To ensure all equipment is kept in perfect working condition and to report any deficiencies

Service

  • Be able to describe and ensure the quality of food items, ingredients, and preparation methods, as well as provide knowledge of sakes and wines to all customers
  • Supervise the team and ensure the execution of a high level of service and drink standards
  • Participate in service to support the team.
  • Ensure reservations and reconfirmations are captured, recorded, and honored
  • Handling and resolving guests complaints

Human Resource

  • Train, evaluate, lead, motivate and coach all employees in KYTHM to ensure that established Mission, Vision, and Core Values are met.
  • Planning, coordination, and supervision of staff to attain high standards of product knowledge and service.
  • Prepare work schedules and ensure sufficient manpower for all shifts in an efficient manner
  • Planning with OM and execution of training programs 
  • Highlight and work with the OM to handle staff disciplinary issues and grievances

Health and Safety

  • Ensure all equipment and spaces conform to sanitary regulations and high housekeeping standards
  • Enforce food labeling.
  • Monitor and ensure proper handling of equipment

Others

Any other tasks as assigned to you by the OM.

Requirements

  • At least 2 years of working experience (supervisor/managerial role) in a Japanese Fine Dining Restaurant 
  • Good knowledge of omakase course dishes and Sake
  • Excellent communication and interpersonal skills
  • Comfortable and confident to interact with others over the phone, messaging, emails, and face-to-face
  • Conscientious, friendly, and courteous
  • Able to multi-task and work with tight deadlines
  • Ability to work independently and in a team

Working Days: 5.5 days per week (fixed Sunday OFF)
